There’s nothing quite like the thrill of fishing, and I’ve felt that rush ever since I was young. Back then, the mere thought of an upcoming trip would fill me with such anticipation that I could hardly sleep, much like a child on Christmas Eve, wide-eyed and restless with the promise of the day to come. That same excitement washed over me as I prepared for an offshore adventure with Poseidon Fishing Charters NSB, led by Captain George Kotsonis, a man whose reputation as both an expert fisherman and an all-around great guy preceded him. On that quiet night before the trip, I envisioned the open water, the adrenaline of bent rods, and the unmistakable sound of lines tearing through the air.

When the morning finally came, I arrived bright and early at the docks, ready to meet George and his first mate for the day, Kevin Mount. Both were prepped and eager to embark on what I hoped would be an unforgettable day on the water. We departed from the docks and made our way through the scenic intercoastal waters, when a light rain began to fall, casting a beautiful rainbow on our port side. Despite the weather, George remained calm, always mindful of the conditions, wanting to ensure we had the best chance for success.


We stopped at a spot just about a mile and a half offshore to wait out the weather and try our luck at catching some flounder. It wasn’t long before George had us right where we needed to be, and almost immediately, I found myself reeling in the first flounder of the day - a promising start to what would unfold as an extraordinary adventure.

Whether it’s Captain George himself or Captain Lance Cameron, who unfortunately couldn’t join us on this particular outing, their goal is always to craft an experience tailored to the client’s desires. George saw a break in the weather and turned to me with a grin, asking if I was ready to venture farther offshore to target a variety of species he knew we could find around some structure. Of course, I couldn’t resist the opportunity to make this trip even more epic than it had already started.


As we pulled up anchor and headed out to deeper waters, it gave me a chance to chat with George about his background and how he came to live the dream of becoming a captain. With an easy smile, he shared that becoming a captain had been a lifelong aspiration, and when the opportunity finally came, he seized it without hesitation.


Beyond his life on the water, George is a devoted family man. He’s married to his wife, Devan, and they have two beautiful children, Leo and Ezra. Together with his family, George also runs The Beacon restaurant, a beloved fixture in New Smyrna Beach for over four decades.


Located on the iconic Flagler Avenue, The Beacon has been a family affair, with George working alongside his father, brother and aunt. Every time I see George, whether on the boat or at the restaurant, he’s always smiling, radiating that same warmth and kindness that so many in the community speak of. You’d be hard pressed to find anyone with a bad word to say about him.

Soon, we arrived at the fishing grounds. The water had cleared, and we were surrounded by the sight of flying fish darting beside us in the crystal blue ocean. George took a quick glance at the fish finder, and from his nod of approval, I knew we were in for a treat. We rigged up some lines with squid and shrimp, ready to drop them down to the reef. It didn’t take long before the action began - snapper after snapper, from vermillion to red to lane, were on our lines. Soon after, triggerfish joined the mix. We worked the reef back and forth, carefully sharing the space with other captains nearby, always staying respectful of the fishing etiquette that comes with this territory, but never straying from the hot spots George knew so well.


It was a perfect day of fishing - everything I had hoped for and more. With each tug on the line, I was transported back to my childhood, to the times I spent fishing with my grandpa. Those early trips are etched in my memory, and as I pulled in fish after fish, those moments came flooding back, reminding me of why I fell in love with this sport in the first place. The water was warm, the air crisp, and after a while, I couldn’t resist jumping in for a quick swim with my buddy Kevin, just to soak in the beauty of it all.


We stayed out for a few more hours, making the most of our time before finally turning back toward shore, the boat slicing smoothly through the waves as George pushed the throttle down. As we returned to the dock, I couldn’t thank George enough for the incredible experience. Before we said our goodbyes, George offered up one last piece of hospitality - since his family owned The Beacon, they would filet and cook up the fish I had just caught, any day but Wednesday, because they are closed.

The next day, I met up with George and Lance, who expertly fileted the fish we caught. While I decided to take mine home and cook it myself (pictured below), I couldn’t help but think what a fantastic option it was to have your fresh catch prepared right at one of the town’s most beloved restaurants.
